Strawberry-Chocolate Milkshake Recipe

After my son came home from school announcing that his class was going out for milkshakes, I needed to come up with a version that he could take to school so that he could share the experience with his friends. He is hooked now. We’ve been trying out different variations, and thought we’d share this version with you.

With hot summer weather, adding a cool milkshake to a meal can be a healthy treat. Instead of ice cream, this milkshake uses full-fat coconut milk to make it thick and creamy. Have it with a burger in a lettuce wrap, or enjoy it on its own. Go ahead and indulge with this thick delicious shake!

Strawberry-Chocolate Milkshake

Serves 2

2 cups frozen strawberries
1 (400 mL) can full-fat coconut milk
3 tablespoons cacao powder
2-3 tablespoons honey (to taste)
pinch of Himalayan or sea salt

Place all ingredients in a blender and blend until strawberries are emulsified and everything is thick and creamy.

Tip: on a really hot day, place the can of coconut milk in the fridge for a couple of hours to keep everything ice cold.
Variations:
AIP - replace cacao with carob powder
Keto - replace honey with yacon syrup or your favourite non-caloric sweetener
Low histamine - replace cacao with a teaspoon of vanilla, and use frozen mango or peaches instead of strawberries.
