WELCOME TO 2020! Looking back on 2019, one of the foods that featured predominately in my diet was MACADAMIA NUTS. These nuts are high in healthy monounsaturated fats, low in histamines, and low in FODMAPS making them suitable for people struggling with many complex health concerns. Macadamia nuts are also great for people doing a Ketogenic diet due to their high fat content.
It took me a while to find a source of raw, organic macadamia nuts, but I’ve been very happy with Rancho Vignola. Their quality is great, and they have a philosophy I can stand behind. To save money you can do a large bulk order in September at whole sale prices. I did this, so I keep my nuts in the freezer to keep them fresh and to prevent the oils from spoiling. You can also check your local health food store, but make sure they come from the refrigerated section.
In November I posted a recipe for DELECTABLE DUKKAH, which is now a staple in our household that I make from macadamia nuts. It’s absolutely delicious, but the WHITE HOT CHOCOLATE is my favourite.
MACADAMIA WHITE HOT CHOCOLATE
This recipe is perfect on a cold day, as a breakfast drink, as a mid-afternoon snack, as a dessert, or anytime you want something warm and comforting. This recipe will fill one large mug, but can easily be multiplied as needed.
Ingredients
1 1/2 cups of water or your favourite milk alternative
1/4 cup raw, organic macadamia nuts
roughly 3 Tbsps or 50 grams of raw cacao butter (I always just eyeball it)
1/2 tsp vanilla extract (alcohol free)
1/8 tsp Himalayan or sea salt
sweetener options:
- for Paleo, gut-healthy try 3 large dates
- for low histamine try 1 Tbsp honey or maple syrup
- for SIBO use stevia (4-6 drops) or honey if tolerated, or a combination of the two
- for Keto try stevia, monk fruit or Lakanto to taste
optional: for extra foam blend in a scoop of collagen powder (not suitable for low histamine)
Directions
Heat milk alternative or water to boiling. Place all the ingredients into a high speed blender such as a Vitamix or Blendtec, and blend on high speed until rich and creamy. Drink immediately!
If you don’t have a high speed blender, then melt the raw cacao butter in a pot with the milk or water before adding it to your blender. If you are using dates, then you can heat them in the liquid mixture as well to soften them for easier blending.
